Even though we may not be the most religious of families, we like to observe holidays like they are part of our ancestry, our heritage (like celebrating Fourth of July as an American). Seeing as Passover is one of the biggest Jewish holidays, we like to focus on what we feel are the most important (obviously to us!) lessons to be had.
So:
1) clean your house! It's a mess. Even if it's not, go through all your things, sort out what you want to keep/donate/throw and vacuum under that furniture!
2) don't eat bread. We live in a bread-obsessed Western world, so it's nice to take a breather for a while. Have quinoa, make polenta, eat socca (chickpea pizza).
3) be grateful for your freedom. This one is easy, but almost too easy to overlook. You go where you want to, say what you want to, and get to be with whoever you want to. Lucky you/us/me.
And of course no Jewish holiday would be complete without recipes! Here is our ridiculously simple recipe for matzah balls, which you can make any time of year and boil in any soup/broth you want. This is just the recipe for the balls, as the soup is really up to you (we just usually fry up some onions/carrots/celery that has been diced and then add stock, then boil the matzah balls for 40 min in that soup)
You'll need:
4 organic, free-range eggs
2 tbsp oil
1 tbsp water
many good shakes of salt
1 cup of matzah meal (if you don't access to matzah meal (like us) you can make your own in a high powered blender with big sheets of matzah)
Blend the eggs, oil, water and salt together. Slowly add matzah meal until it's all incorporated. Leave in the fridge for at least 30 minutes (or leave overnight if you have the foresight!). Gently form into balls, but don't squeeze/form them into a ball shape as they will stick together anyways. When placed in the boiling broth, remember that they will puff up quite a bit, so make sure you have enough space in your pot. Cook for about 40 minutes, flipping them around to make sure that all sides are cooked. Enjoy!!!
