Nothing says "summer" more than Fourth of July fireworks, campfires, and outdoor eating. Definitely one of my favorite foods as a child that make me all nostalgic are gooey, delicious, s'mores. If you haven't ever had one, I highly suggest putting it on your list of things to do this summer! But I have to admit, being around an open fire isn't always possible (or safe if you've got daredevil children!) so I re-created the classic s'mores in the oven with a rave review all'round.
Oven Baked S'mores (nothing is measured here as it will depend how many you need/want to make)
Box of Graham Crackers (there really is no substitution - get the real thing if you can!)
Bar of Milk or Dark Chocolate, broken into pieces
Bag of Marshmallows (if you're vegan/kosher/halal make sure the gelatine they use is animal/pork free)
Preheat oven to 160c/300f. On a baking sheet, space Graham Crackers about 1 inch apart on a sheet of baking paper (makes for easier clean up in case there's any spillage). Place one marshmallow on top of each Graham Cracker - from experience, it's better to put less marshmallow than too much as they expand with the heat and if you're not careful all of the crackers will be glued together! Of course if you're using mini marshmallows you'll want to double up probably.
Place them in the oven and watch for them to get poofy and golden - about 7-10 minutes. Remove from the oven, top a piece of chocolate on top of the marshmallow (it will deflate, which is fine) and quickly place the other Graham Cracker on top so that it adheres. It's important to do this while the marshmallow is warm, because it "glues" the S'more together.
Devour. Devour. Repeat process of making them, and devour again!
